Poulet Basquaise (Basque Chicken) French

I first had this dish at Bistro Clovis , a haven of authentic French cooking on Market St. in San Francisco. I love the rich sauce that is the product of bell peppers that have almost melted, accented with the smokiness of Spanish paprika. Serve over egg noodles or rice.

Ingredients    2 tablespoons olive oil4 ounces pancetta or serrano ham, cut in 1/4 inch dice1 3 to 4 pound chicken, cut into serving piecesSalt and freshly ground pepper1 large onion, chopped3 large bell peppers, preferably red (or try a combination of red, orange and yellow), thickly sliced6 large cloves garlic, sliced2 cups chopped ...

Parisian Apple Tart French

You can make this the night before, then serve at room temperature, or heat at 300°F for 10 to 15 minutes. - Joanna.

Ingredients    1/4 cup water1/4 cup plus 2 tablespoons sugar (divided use)7 apples, such as Granny Smith, Jonathan or Fuji (divided use)1 teaspoon vanilla1 puff pastry sheet (approximately 8.5 ounces)2 tablespoons ...

Their diets, referred to in nutrition circles as the Mediterranean Diet, consists of lots of olive oil, nuts, red wine, and lean protein. It has been widely touted as a top defense against chronic diseases and a sure-fire way to drop pounds. It’s also the most effective diet to protect against heart disease.
